OAXACAN FOOD.

LA GUELAGUETZA.
La Guelaguetza.
Para los Oaxaquenos la Guelaguetza es el festival cultural mas importante de danzas folkloricas, musica y comida. Esta se celebra los dos primeros lunes del mes de Julio.

The Guelaguetza.
The Guelaguetza it's named for Oaxaca’s most important cultural festival, an extravaganza of regional dancing, music and food that take place on two Mondays in the month of July.
Comida Oaxaquena.
Soy de Oaxaca México y esta es mi comida favorita.
Oaxacan food
I'm from Oaxaca Mexico and this is my favorite food.

Horchata con tuna y nuez. Esta es una bebida hecha a base de arroz molido y almendras, adornada con nuez, pedazos de melón y tuna roja.
Horchata. A white drink made from ground rice and almonds, topped with chopped pecans, decide cantaloupe and red cactus fruit marmalade.

Clayuda. Una tortilla delgada y grande de maíz, esta es sazonada con asiento (una pasta suave de color café hecha con la grasa de los chicharrones) embarrada de frijoles negros en pasta adornada con quesillo (Este viene en tiras largas enrolladas en forma de bola)
y col, acompañada con cecina enchilada (filete de puerco marinado con chile)

Clayuda. A large, thin, chewy corn tortilla that is seasoned with asiento (This soft, pale brown paste, made from the fat used for frying chicharrones, is an important Oaxacan condiment), then coated with black bean puree and topped with quesillo (A flavorful string cheese formed into long ribbons that are wrapped in a ball) and vegetables and cecina enchilada (chile-marinated pork)
